Cucumber Carpaccio with marinated Tofu and mustard dressing

List of Ingredients:

1 cucumber
80 g leaf salad
250 g Tofu, natural
Kurkuma, coriander, herbal sea salt
1 TBS lemon juice

Mustard dressing:
1 TBS of medium hot (or coarse grained) mustard
1 TBS of white balsamic vinegar
1 Teaspoon honey, black pepper
1 TS fresh dill or coriander
1 TBS sour cream
1 TBS yoghurt
1 TBS grated apple
a dash of mint


Zubereitung:
  • Peel the cucumber in stripes until the core becomes visible
  • Cut the salad into bite-size pieces
  • Cut the tofu into 5 mm thick and 2 cm long rhombs. Spice with curucuma, coriander, herbal sea salt and lemon juice.
Mustard dressing:
  • Rub the apple roughly, hack the mint-leaves well. Mix all ingredients.
  • Arrange the green salad on a plate and pile up the cucumber stripes in the middle. Use dressing as advised. Distribute the tofu rhombs on the salad.
